Ingredients

Instructions

  1. Preheat the oven to 200°C (convection). Mix sweet potato fries with 1 tablespoon of olive oil, salt, and pepper, and spread them on a baking sheet. Bake for about 25-30 minutes, turning once, until crispy.
  2. For the burger patties, roughly mash the chickpeas in a bowl (do not puree, there should still be chunks).
  3. Add onion, garlic, red bell pepper, cumin, parsley, oats, 0.5 tablespoons of olive oil, 0.5 teaspoons of salt, and 0.25 teaspoons of pepper to the chickpeas and mix well until a moldable mixture forms. Add more oats if necessary.
  4. Shape the mixture into 2 patties.
  5. Heat the remaining olive oil in a pan over medium heat. Fry the patties for about 5-7 minutes per side until golden brown and heated through.
  6. Toast the burger buns briefly. Top with lettuce, tomato slices, cucumber slices, and chickpea patty. Serve with the sweet potato fries.
