Sinh To Bo - Vietnamese Avocado Shake with Lime

In Vietnam the avocado is a sweet fruit, not something for bread. Blended with milk and honey it makes a thick, cold shake - traditionally with sweetened condensed milk, here far less sweet.

Sinh To Bo - Vietnamese Avocado Shake with Lime

Ingredients

Instructions

  1. Halve and stone the avocados and scoop out the flesh. Use only ripe fruit - unripe avocado tastes grassy in a shake.
  2. Put it in the blender with the ice-cold milk, honey and lime juice.
  3. Blend on high for a minute until the mixture is pale and thick.
  4. Pour into glasses and serve cold at once - after half an hour the shake loses both colour and freshness.

Warum die Limette dazugehört

In cut flesh, the enzyme polyphenol oxidase turns avocado brown within minutes. Acid lowers the pH far enough that the enzyme barely works - a squeeze of lime keeps the shake green.
