Ingredients
- 320 g Basmati rice (weighed raw)
- 120 g Green lentils (weighed dry)
- 60 g Raisins
- 80 g Dates (pitted, roughly chopped)
- 200 g Onion
- 2 g Cinnamon
- 2 g Turmeric
- 0.2 g Saffron (steeped in a little hot water)
- 28 g Canola oil
- 6 g Salt
Instructions
- Cook the lentils in salted water for about 20 minutes until soft but still holding shape. Drain.
- Parboil the rice in plenty of salted water for 6 to 7 minutes, then drain. It should be soft outside and still firm inside.
- Slice the onions and fry slowly in the oil until golden. Add raisins and dates for the last two minutes.
- Layer rice and lentils alternately in the pot, scattering turmeric and cinnamon between the layers.
- Wrap the lid in a cloth, put it on and steam over the lowest heat for 30 minutes.
- Pour the saffron water over the rice, spread the onion mixture on top and serve.
Das Tuch unter dem Deckel
It catches the condensation. Without the cloth, water drips back onto the rice and the separate grains turn to mush.
