Ingredients
- 240 g White beans (weighed dry, soaked overnight)
- 160 g Onion (finely diced)
- 40 g Tomato paste
- 60 g Bell pepper
- 30 g Olive oil
- 3 g Paprika powder
- 6 g Salt (only at the end - salted early the beans stay firmer)
- 200 g Rice (weighed raw, served as pilav)
Instructions
- Soak the beans overnight in plenty of cold water and drain the next day.
- Put them on in fresh unsalted water and simmer for 60 to 75 minutes until soft. Keep the cooking water.
- Sweat onion and pepper in the olive oil. Add tomato paste and paprika and toast for a minute.
- Add the beans with enough of their cooking water to barely cover, and simmer uncovered for 20 minutes until the sauce thickens.
- Only now add the salt.
- Wash the rice until the water runs clear and steam it in twice its volume of salted water for 12 minutes. Serve the beans over the rice.
Warum Bohnen erst am Ende gesalzen werden
Salt and acid slow down the softening of the skin. That is why tomatoes and tomato paste only join once the bean is already tender - otherwise it simmers forever and stays tough.
